gluten-free shortbread
our shortbread biscuits have the perfect dunking ability, ready to be enjoyed alongside your hot beverage of choice! makes: 12.
ingredients
175g salted butter (softened)
75g caster sugar (plus extra for sprinkling)
245g gluten-free plain flour (i use doves farm)
1tsp xanthan gum
method
preheat your oven to 180c/250 fan/gas mark 4.
mix together the butter and sugar with a wooden spoon until soft and creamy.
add in the flour and xanthan gum and mix the ingredients together until a firm dough is formed.
turn the dough out onto a lightly floured worktop and knead until smooth. then, roll out the dough until it is 5mm in thickness and, using a 3 inch x 3 inch round cutter, stamp out 12 biscuits.
arrange the biscuits on a baking tray, ensuring that they are spread slightly apart. prick the tops with a fork and bake for 20 minutes (or until lightly golden).
finally, while still hot, sprinkle a little sugar on top of the biscuits and leave to cool.
