gluten-free banana bread

a perfect accompaniment to your afternoon tea or coffee, this banana bread pairs well with double cream or ice cream - warmed through, of course! serves: 7-8.

ingredients

  • 140g unsalted butter

  • 140g caster sugar

  • 2 medium-sized eggs

  • 3 overripe small bananas

  • 135g gluten-free self-raising flour (i use doves farm)

  • 1tsp gluten-free baking powder

method

preheat your oven to 180c/160 fan/gas mark 4.

once you have mashed your banana until smooth, cream the butter and sugar in a separate bowl until light and fluffy.

crack your eggs into the butter and sugar mixture and mix with a wooden spoon until well combined. add in the mashed banana and sieve in the flour and baking powder.

then, fold in the dry ingredients until well combined – the batter should easily fall off the spoon (dropping consistency) when it is ready.

bake the banana bread for 45 mins – 1 hr, or until a knife comes out clean when inserted into the middle.
