gluten-free muesli cookies (adapted from nosh)

best enjoyed with a hot cup of tea, or with a healthy dollop of vanilla ice cream! the seeds make it healthy, right? makes: 10.

ingredients

  • 90g GF oats

  • 150g GF plain flour (i use doves farm)

  • 1tsp xanthan gum

  • 220g caster sugar

  • 2tsp cinnamon

  • 80g chopped mixed nuts and seed mix

  • 125g butter

  • 2tbsp golden syrup

  • 1/2tsp GF bicarbonate of soda

  • 1tbsp warm water

method

preheat your oven to 170c/150 fan/gas mark 3.

melt the butter and syrup in a pan over low heat until the butter has melted. add the bicarbonate of soda and water to the butter and syrup mixture – the bicarbonate of soda will fizz a little here.

meanwhile, mix all the dry ingredients together with the nuts and seeds until well combined. then, create a well in the centre of the dry ingredients and combine with the wet ingredients until a dough is formed.

form the dough into 10 balls, place on a baking tray lined with baking paper and bake for 15-20 minutes, or until the cookies are golden brown.
