sweet potato dip
our sweet potato dip is best served with your favourite crunchy vegetable sticks, or in a wrap for lunch - lettuce, red bell pepper and avocado pair really well with this! serves: 2-3.
method
2 small sweet potatoes, peeled and chopped
2 cloves garlic, peeled and crushed
6 tbsp water, for blending
4 tbsp sunflower oil (you can use whichever you have)
1/2 tsp cumin powder
1/4 tsp chilli flakes
salt and pepper, to taste
ingredients
preheat your oven to 220c/fan 200/gas 7.
put the sweet potato, garlic, 2 tbsp of the oil, cumin, chilli flakes, a pinch of salt and pepper (each) in a roasting tray and mix thoroughly.
then, place this in the oven and roast for 15-20 mins, or until the potato has softened.
once cooled, transfer the mixture to a chopping board and roughly dice the garlic and potato before placing the mixture in a food processor (or blender) and blending it with the remaining oil and water until smooth.
