gluten-free rock cakes
rich and chocolatey, these rock cakes are best served warm with a healthy serving of double cream or vanilla ice cream! makes: 12.
ingredients
200g unsalted butter (softened)
200g caster sugar
320g gluten-free plain flour (i use doves farm)
30g cocoa powder
1 medium egg
5g xanthan gum (i use doves farm)
1/2 tsp baking powder
1/2 tsp salt
method
preheat your oven to 180c/fan 160/gas 4.
meanwhile, cream together the butter and sugar until light and fluffy, then mix in the egg until well-combined.
add in the flour, cocoa powder, xanthan gum, baking powder and salt and mix until you get a stiff batter
then, using two metal spoons, place 12 mounds of batter onto two lined baking trays and bake for 15-20 minutes (or until slightly coloured around the edges)
