gluten-free apple and walnut cake
this cake is best enjoyed with hot vanilla custard! serves: 6-7.
ingredients
60g unsalted butter
85g granulated sugar, plus extra for sprinkling on top
2 medium eggs
1 tsp vanilla extract
3 tbsp water
120g gluten-free self-raising flour (i use doves farm)
1 tsp gluten-free baking powder
1/4 tsp salt
2 baking apples (peeled, cored and cut into small chunks)
handful walnuts (roughly chopped)
method
preheat your oven to 160c/180 fan//gas mark 6.
then, cream the butter and sugar together in a bowl until pale and light in consistency.
after this, mix in your eggs, water and vanilla extract until well combined.
sieve in your flour and baking powder and fold until there are no lumps of flour, then mix in the salt, apple chunks and walnuts until well combined.
pour the mixture into a 9-inch cake tin (round), sprinkle a pinch of extra sugar on top and bake for about 40 minutes, or until a knife comes out clean.
