gluten-free apple turnovers

with perfect, flaky pastry, these turnovers are a great accompaniment to an afternoon cup of tea or coffee - makes: 12.

ingredients

filling

  • 5 small apples (peeled and diced)

  • 2 tbsp water

  • 1 tbsp lemon juice

  • 1 tsp caster sugar (plus extra to sprinkle on top)

pastry

  • 280g ready-rolled gluten free puff pastry cut into 12 8 cm x 8 cm squares

  • 1 whisked egg

method

preheat your oven to 220c/fan 200/gas 7.

in a pan over medium heat, stew the apples in the water, lemon juice and sugar for 10 minutes or until softened.

then, place a tablespoonful of the apple mixture into each corner of the pastry squares.

after this, brush the edges of the pastry with the egg wash, fold the empty side over the filling side - creating a triangle shape - and crimp the edges using a fork.

repeat this for all 12 of your pastry squares, then brush some more egg wash on top, sprinkle over the extra sugar and bake for 15 minutes or until golden brown.
